This recipe I created to use up a bunch of left over ricotta I had after buying an excessive amount of ricotta and tbh I will be buying excessive amounts of ricotta in future again for this purpose.
Now the thing to know with this recipe is that it is using proper firm ricotta. I hear you saying, โwhat is that?โ. Essentially it is NOT the smooth creamy ricotta that perfect italiano do. Itโs the kind that comes in the bigger tubs or you can get from a good deli. If you are stuck with the smooth creamy kind see if you can drain it further with a cheesecloth otherwise your cake will be too wet.

Gluten Free Apple Ricotta Cake
Ingredients
320g firm ricotta, drained
Zest of 1 lemon
250g caster sugar
2 tsp vanilla extract
3 eggs
130g melted butter
120g plain flour (GF - I just used the Woolies brand)
50g almond meal
1 tsp baking powder
1/4 tsp salt
2 medium apples, cored and finely sliced
1/4 cup flaked almonds
1 tbsp caster sugar
Method:
Preheat oven to 180C and grease and line a 20cm round cake tin.
In a mixing bowl add the ricotta, caster sugar, vanilla and lemon zest. Mix with electric beaters until smooth.
Add the cooled melted butter and mix until combined. Beat in the eggs one at a time.
Sift the flour, almond meal, baking powder and salt into the mixture and gently fold to combine.
Pour the mixture into the prepared cake tin.
Arrange the apple slices on the top of the cake then sprinkle over the flaked almonds and finally the extra tbsp of caster sugar.
Bake in the preheated oven for 50-60 minutes. Allow to cool slightly in the tin before removing.
Substitutions:
Apple: Sub the apple for another fruit like peaches, plums, nectarines or pears
Plain flour: If you donโt need this to be GF you could use regular plain flour but I havenโt tested this.
Ricotta: You can actually make your own ricotta if you canโt find firm ricotta you can also make your own with just milk, lemon juice and salt!
